Recook: Bobby Flay's Grilled Zucchini

I'm in love with Bobby Flay's TV Cooking Show, whether "Beat Bobby Flay", Brunch @ Bobby Flay's and the newest program is "Bobby Flay's Barbecue Addiction".

Okay, maybe I don't have the grill tools like him, he has 2 types of grill tools; charcoal types and gas stove. I only using grilled pan with gas stove LOL.

Zucchini is not too famous in Indonesia because sometimes people here misunderstood between zucchini and Japanese cucumber. Usually, I'm cooking zucchini by sauteed, baked or as filling of vegan croquette but today based on original recipe from "Bobby Flay's Barbecue Addiction", I recook his recipe of Grilled Zucchini.

The original recipe the grilled zucchini is served with jalapeno pesto and Greek yogurt, but I make a vegan version by serving it with spicy ketchup. Let's take a look my recook below!

This recipe is for 3-4 portions and we only need 1 piece of fresh zucchini. Don't forget to prepare your wooden skewers previously by soaked it in water overnight to avoid burned in grilled pan.

Sliced fresh zucchini with same width so it will be cooked at the same time. Preheat the grilled pan over medium heat on gas stove.

Arranged sliced zucchini using 2 pieces of wooden skewers (not perfect shape but it's okay because it kinda hard to arrange it actually)

Drizzled zucchini with vegetable oil and seasoned both side with salt, freshly ground black pepper, and chili flakes.

Grilled zucchini on the grilled pan for 3 minutes each side until grilled marked is formed and zucchini becomes tender.

Placed grilled zucchini on a plate and sprinkled more with a pinch of salt.

Then, drizzled grilled zucchini with splash of olive oil.

For spicy ketchup, mixed well together 4 tbs ketchup with 1 tsp Indian curry powder and 1 tsp chili flakes.

Enjoy grilled zucchini by dipping it in spicy ketchup. This is heaven; sweet, smokey, salty, a little btt spicy, perfectly matched with tangy and spicy sauce. YUM!
