Spicy & Creamy Farfale Pasta

I love watching many cooking show in my TV cable, especially "Giada at Home" where Giada always gives lots of simple and delicious pasta recipes. Kinds of pasta I like are penne, rigatoni and farfale because those shape are so cute, especially farfale, its shape like bow tie and perfect for sauteed pasta recipe. Today's recipe is using farfale, sauteed with mascarpone cheese and add "Sambal" (or chili paste) to kick it your taste bud. If you don't have farfale pasta stock in your pantry, you can replace with penne or rigatoni. Let's check this out!

The ingredients we need are farfale pasta, mascarpone cheese, fresh basil, grated parmesan cheese, onion, fresh sweet corn, sambal (or chili paste) and fresh white mushrooms. This recipe for 2 portions.

First of all, bring to boil 2 liters water in a large pot over medium heat, add 1 tsp salt and 200 gr farfale pasta. Cooked for half time from maximum time based on the direction time in the packaging (my farfale stock direction time maximum is 12 minutes, so I cook my farfale in 8 minutes). Drained and directly soaked in ice water, and drained again. Set aside.

Then, chopped fresh white mushrooms into pieces, shaved fresh sweet corn, and roughly chopped half onion.

Next is heat 2 tbs olive oil in a large skillet over medium heat. Add chopped white mushrooms, sauteed for 1 minute.

Add chopped onion, sauteed until mushrooms reduced its size and onion becomes soft.

Add shaved fresh sweet corn and stirred for 2 minutes. Seasoned with 1 tsp salt

Add 1 tbs sambal (or chili paste). If you demand more spiciness taste, add 1/2 tbs sambal. On the other hand, reduce the amount of sambal if you don't like too spicy. Stirred until well combined.

Add 125 gr mascarpone cheese, stirred until well combined.

Add 1/4 cup water and stirred again.

Add cooked pasta, stirred until all ingredients mixed well.

Add 2 tbs grated parmesan cheese, stirred again until well combined.

Roughly chopped 2 tbs fresh basil and add into pasta.

Add another 3 tbs grated parmesan cheese.

Stirred until well combined and the pasta is done.

Served warm and enjoy immediately.

The taste are so yummy!! Spicy, creamy, pasta is cooked perfectly al dente, parsley gives a bright taste and sweet corn gives crunchy texture and sweetness. Totally perfect comfort food for sunday's lunch time!! Hopes you like the recipe, enjoy...

125 gr mascarpone cheese (room temperature)
1/4 cup water
2 tbs fresh basil, roughly chopped
5 tbs grated parmesan cheese
Directions:
1. Heat olive oil in a large skillet over medium heat. Add chopped white mushrooms, sauteed for 1 minute.
2. Add chopped onion, sauteed until mushrooms reduced its size and onion becomes soft.
3. Add fresh sweet corn and stirred for 2 minutes. Seasoned with salt.
4. Add sambal (or chili paste) and stirred until well combined.
5. Add mascarpone cheese, stirred again until well combined.
6. Add water and stirred again. Add cooked pasta, stirred until all ingredients mixed well.
7. Add 2 tbs grated parmesan cheese, stirred again until well combined.
8. Add fresh basil and 3 tbs grated parmesan cheese and stirred until well combined and the pasta is done. Served immmediately.
